Mom's Yummy Recipes
Zucchini Bread

4 Eggs
2 cups Sugar
1 cup oil
3 1/2 cups flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon
3/4 teaspoon baking powder
2 cups grated zucchini
1 cup raisins
1 cup walnuts
1 teaspoon vanilla

In large bowl beat eggs.  Gradually add sugar, then oil.  Combine dry ingredients, add to oil mixture, alternating with zucchini.  Stir in raisins, walnuts and vanila.  Pour into 2 bread pans and bake at 350° for 50-65 minutes.
Rice Krispies Treats October 6, 2009
 
1/4  cup margarine
1 package (10 ounces or 40 count) regular marshmallows
6 cups rice krispies

Melt margarine in large sauce pan over low heat; add marshmallows and stir until completely melted. Remove from heat.  Add rice krispies.  Stir until well coated. Using buttered spatula, spread into 13 x 9 x 2 inch pan.
Chicken Soup October 4, 2009
 
2 cans chicken broth
8 ounces skinned chicken breast cut into strips
2 carrots - sliced
1 scallion - sliced
1 celery rib - chopped
1/2 teaspoon black pepper

In large saucepan, over medium heat, in one can of broth, cook chicken strips until no longer pink.  Add remaining broth, 2 cups water, carrots, onion, celery and black pepper.  Bring to a boil, reduce heat and simmer 30 minutes.
Chicken Chow Mein October 4, 2009
 
1 cup chicken broth
3 cups sliced onion
3 cups sliced celery (sliced on an angle)
    Boil these until tender
Add 1 can bean sprouts - drained and same cut up chicken.
Thicken with 1/2 cup cold water, 6 tablespoons cornstarch
2 Tablespoons soy sauce
1 Tablespoon sugar
Serve very hot over chow mein noodles and rice.
Potato Soup October 4, 2009
 
5 large potatoes, peeled and diced
Small carrot - diced
Large onion - chopped fine
1 Tablespoon parsley flakes
salt, pepper, thyme
Milk
Margarine

In medium size pot, combine water (enough to cover potatoes), potatoes and onion, and bring to a boil.  Lower heat and cook for 10 minutes.  When potatoes are soft enough, mash them down and add milk, butter, salt, pepper and thyme and cook until soup thickens.
Ice Box Cookies October 4, 2009
 
1/2 pound butter (2 sticks) at room temperatur
1 cup dark brown sugar
1 cup sugar
2 eggs - beaten
1 rounded teaspoon baking soda
1 cup chopped almonds
3 12 cups flour

Cream butter, brown sugar and sugar until creamy.  Add 2 beaten eggs -mix well.  Mix baking soda and flour together then add to butter mixture.  Mix well.  Add chopped almonds.  Make 2 rolls, wrap in wax paper and freeze overnight.  Slice thin, bake about 5 minutes or until light brown.
Pumpkin Cranberry Bread October 4, 2009
 
2 1/4 cups all purpose flour
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 cups sugar
1/2 cup vegetable oil
1 cup LIBBY's solid pack pumpkin
1 cup cranberries, chopped

In large bowl, combine flour, pumpkin pie spice, baking soda and salt.  In small mixer bowl, beat eggs, beat in sugar, oil and pumpkin.  Pour pumpkin mixture into dry ingredients; stir just until moistened. Stir in cranberries.  Spoon batter into 2 greased and floured 8 x 4 inch loaf pans.  Bake in preheated 350° oven for 60 minutes or until wooden pick comes out clean.  Cool for 5 to 10 minutes and remove from pans.
Apple Crumb Cake - German Style October 4, 2009
 
1 1/2 cups flour
1/2 cup sugar
Dash of salt
1/2 cup butter
5 cups sliced apples
2 tablespoons tapioca
1/2 cup sugar
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Combine flour, 1/2 cup sugar, salt and butter.  Mix well with pastry blender until crumbs form.  Measure out 3/4 cup crumbs and set aside.  Press remainder into 9 inch spring pan covering bottom and 3/4 up sides.  Mix apples, tapioca, 1/2 cup sugar and spices.  Arrange in crumb shell.

Bake at 425° for 20 minutes.  Remove from oven and sprinkle 3/4 cup of crumbs on top.  Bake 20-25 minutes or until crumbs are golden brown.
